Took me a bit of testing to figure out how the sync from Omnivore to Obsidian worked as I wanted to make sure to avoid overwrites.

This set up ensures nothing I do in Omnivore will overwrite notes I've added to the synced file in Obsidian.

The one thing I have not been able to find is how to exclude things from sync. For example, I'd like to exclude just the Newsletters from my Obsidian sync and just interact with them through Omnivore. But I can't find anything in the documentation addressing this functionality.

At the moment this is not a possibility. What you can do is assign a label (tag) and use that for syncing to Obsidian. You can use some rules to apply that label for items that you save constantly (like a website, blog, etc). Here's the details about rules: https://docs.omnivore.app/using/rules.html
